Low carb breaded boneless mesquite pork chops

Whaaaaat? This is some crazy good food right here. And ONLY 3 ingredients! AND low carb! It’s got it all!

Ingredients:
1 package of dry mesquite marinade
1 bag of pork rinds, crushed into crumbs
Half a pork loin

Directions:

First cut the pork loin into pork chop sized slices.

Next, crush the pork rinds into crumbs.

Mix the mesquite and the pork rinds in a baggie.

Put chops one at a time into baggie and shake to get the coating all over.

NOTE: If you want spicy mesquite pork chops, you can make an egg wash with eggs and Cajun, cayenne pepper, or creole. Dip the chops in the egg wash prior to coating them with the breading.

At this point you can cook them in the oven @ 350 for around 40 minutes, or you can grill them like I do! Low heat, about 10-15 minutes on each side.
