This bread is almost cake like and it is amazing. You just have to try it.
Ingredients:
3 Tbsp Butter
3 Eggs
1¼ cups Oil
1½ cups granulated sugar
1 tsp Vanilla Extract
2 cups unpeeled grated zucchini
2 cups flour
2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
1 tsp Cinnamon
1 tsp Cloves
1 cup chopped walnuts or pecans
I like to use zucchini that has gotten to big to be used for anything else. I make multiple batches and freeze some of the batter for later.
First you have to shred the zucchini. I’m spoiled, Kitchen-Aid to the rescue.
Next, gather your ingredients, preheat oven to 350 degrees Fahrenheit and grease 2 9” x 5” pans, or 1 pan if you want 1 bigger loaf.
Beat eggs, oil, sugar & vanilla until mixed well.
Add zucchini to sugar mixture.
Mix dry ingredients together well.
Stir into zucchini mixture.
Add nuts (optional).
Pour the batter into the greased loaf pan, or if making 2 smaller loaves, divide in between the 2 pans equally.
Bake on the middle rack of your oven for 1 hour & 15 minutes, or until toothpick comes out clean.
Or…
Divide it between 2 pans and bake them for about 50 minutes.
Cool for 15 minutes, remove from pans and allow them to cool to room temperature.
Makes 1 scrumptious loaf or 2 smaller loaves. Don’t be greedy. Try to share. 😁<<<<
